I spent decades in and near South Jersey. Pennsauken Mart, Greasy Tony's.

Maine is better many ways, but they do NOT do proper Cheese Steak.

There's no good bread in Maine. Most bread is whiter and softer than WonderBred. "Italian" may have a slight crust on sponged starch. More often it's a Boston dog-bun. (Alternatively there's whole-grain stuff which IMHO might be acceptable for a whaling ship's second year at sea, with extra rum.)

Because cheesesteak sales are rare (partly fewer people, but also because they are so mediocre), they are always "fresh". That's not bad, but the best Philly cheesesteaks are mass-grilled in the evening then banked on the back of the grille to ripen. Midnight to 2am is peak vintage.

Tempting..... but next-day is maybe TOO ripened.

To have a real cheese steak agin.  There some places in Orlando that make an ok one but not like in Philly or even back home in Boston.  I think I gained 20 pounds from them when I worked in landsdale for a year.

Stated like a true pro PRR...
When your out and about in the city downing a few cocktails, there's nothing like walking in a shop and having a steak in under 2 minutes that tastes 1000% better than anything you can get at a Denny's or iHop

If you left the house on an empty stomach, and need a quick fix, you could jump out of the car and get one before the traffic light changes.....that's why they are so dangerous....I think some of the shops are secretly owned by heart surgeons

Yeah, the guy that answers the phones here will run out and grab some at a moments notice and I've watched him put on 20 lbs in the last couple years...I, on the other hand, have SOME self control :icon_biggrin:

If I ever take a break from work and projects, I'll let you know..

What took you from Philly to Austin?.....you should open a steak shop out there
