Will this OT http://www.tubesandmore.com/products/P-TF41318 (http://www.tubesandmore.com/products/P-TF41318) work with 2 x EL84's in push pull, 365v plate load and an 8 ohm speaker?

the plate voltage is on the high side for EL84's. the OT will work.

I think you are good with that trans.
And your plate voltage is fine, the 18 watt Lite IIb calls for 360v. Anywhere in the 300's is good for plate volts on EL84 PP amps from all the schematics I've studied.

    Whats ideal? that depends,  that ot would work fine, its really a fender delux
 type OT for 6v6 @350v,  your going el84 @ 365 there are lots of amp that run el84 hotter @ 365v,
matchless runs el84 hot with a 4k pri, marshall  bass lead runs el84 close to 400v with 8k
output transformer, so depending on your goals you could go 4k matchless like tone,  6600 fender like
or 8k marshall like and im pretty sure doug sells those 6600 for the same price and they will
be shipped faster than any other supplier   scsoul

I have the OT and PT on hand from a prior build that used 6L6's. I plan on paralleling octals and novels to use either 6V6's or 6L6's or EL84's .
When I order parts for  future build(s) I do plan to purchase from Doug.
