Title: 5F6-A Volume Pots

I would like to use a single double gang pot instead of the two volume pots for a 5F6-A build. Are there any issues doing this. ie: interference between the two channels.

No issues other than losing individual volume control of the channels.

I don't know how popular it is to jump the normal and bright channels on a Bassman but it's popular to jump channels on a Plexi. The Plexi has more difference in the voicing between the normal (actually dark) and bright channels. With inputs jumpered you can get a variety of tonal sounds by blending the channels together with separate volume controls.
