Title: Tomato recipes?

Ok, I need some help...  I've got Better Boys, Cherokee Purples, and a bazzilion Juliet.  I like them all raw and have made a few pasta sauces, and I will bleed tomato juice if I get cut.....  I need some new ideas!!  Canning, salsa, anything you guys have tried and liked?

Gazpacho soup!!!!!

It's great, the hotter the day the better, it's served cold.

But you need 1 of these, a hand turn food mill or something like it. This is the 1 I bought at Bed, Bath and Beyond. You go through a LOT of mators making this soup.

Edit; I just looked at some of the recipes and I did not use canned tomato juice, I used the juice from the food mill, and I would probable go with Alton Browns version.

Us southern country boys will always take the first tomato and build a sandwich. Slice the tomato ( none of those city imitations) into 1/2" slices. Add lot's of salt and pepper. Slather two slices of your favorite sandwich bread with plenty of Bama Mayo. (Kraft brand is OK if you can't get the good stuff.) Slap it all together. Repeat, because one ain't enough.

I get very good compliments on my salsa using Juliets
Here's my recipe
My Salsa
Ingredients:
50+ Juliet tomatoes - depending on batch size
2+ Jalapeņopeppers - depending on pepper size and how hot peppers are
2+ Habanero peppers - depending on pepper size and how hot peppers are
1/2 Bunch Cilantro
4 Small carrots
1 Bunch green onions or 1 Tablespoon Onion powder
1 Bulb fresh garlic or 1/2 cup chopped garlic
1 Lime (juice)
1 Orange or Tangerine (juice)
1/2 Tablespoon salt
1/4 cup brown sugar - optional
Can add Poblano's and other peppers if desired

Blender: Making the sauce

Add 20 or so Juliet's to make liquid sauce - about 1/3 total tomatoes
Add Jalapeņo peppers - Habanero peppers
1 Lime juice
1 Orange juice
1/2 tablespoon salt
1/4 bunch cilantro
1 bulb garlic or 1/2 cup chopped
Fill up blender again with more Juliet's to make more liquid sauce

Food processor: Making the chunk
Chop up the carrots
Chop up the green onions
Chop up Juliets to make the chunk
Can add peppers to chunk

Mix sauce and chunk in a large container.

Salsa is best after it sits a day or two.

Take a few of the bigger green ones, slice, dip in egg wash, dredge in cornmeal and fry em up.
