Livin on the road, space is a premium so I just have a student acoustic but I need something electric for testing amps. I got this pickup, but have no clue on wiring it. I just want to send it to a ¼” jack, no tone/vol. I surfed the web but couldn’t find anything that matched up. Anyway, thanks for the help.

Two of those wires are coil taps and is a tap to a single coil for a strat/tele like sound. You don't need the coil taps, so those two wires could be wired/soldered together covered up with shrink wrap or electrical tape---my best guess would be blue and white?? Seems like the red would be the main output wire and the gray/black would be the ground--still only guessing. The hot(red?) would go to the hot terminal on the jack and gray/black to ground terminal.
The only way you can tell for sure is either using a multi-meter to check Ohms output that should be about 8k Ohms or more in humbucker mode or either just experment with different wiring combinations until you get the right output. Once it's right solder it up. Of course if you knew what type humbuker it was, you make could look up the wiring diagram on the internet that would show the right wiring for that pickup. Hope this helps. Platefire
