Well, I guess the amp building will need to slow down for a minute.  The wife has a few standing orders for the wood shop.

Just finishing up this bench for the farm table I already built.  This is Bench #2 :)

Thanks.  The rough sawn wood will be a match for her table I already made.  My wife likes that whole barn wood look so I buy rough lumber from a nice mill here in the Nashville area.  As you might guess, real barn wood has issues with bugs most the time too. 

Now the Big Green Egg project has not kicked off yet but will soon.  The picture is one I want to build but I will will put own twist and turn on my version of course.

Wow, that is beautiful work!  I was just going to say the rough sawn look is really neat!  I take it there are more cool woodworking tools/machines in that garage? :icon_biggrin:

The sawmills around here have pretty much gone silent.  The stave and pallet companies are buying all the wood they can get their hands on at inflated prices in this area.  I need to replace the decking on a bridge over a draw to my barn and I cant find anyone that has any oak to saw.  I may have to anti up and buy some treated pine :rolleyes: at Lowes just to keep it functional...

Well, I am making a little headway.  I decided to build a twin BGe table, one Large and one small egg (wife's idea)...
I can tell you this is a lot of work and lets me know what 55 really feels like LOL...

I 1st saw those Big Green Eggs at Ace hardware by us a few years ago. I've wanted a pair just like you have, a large for big beef brisklets/pork shoulders/#'s of slabs of ribs for a dinner party with guests and a small 1 for just us.

Have you seen the automatic temp adjustment kit they sell that opens/closes the air vents by it self? It's not cheap but it's supposed to keep the temp within, mmm, I think it was ~5 to 10 degrees of what you set it for.

Really helps cut down on the running back and forth to keep the temp where you want it when your cooking something for 6 to 12 hours. I try to stay ~250 degrees for slow smoking. Over that long of time I make a good 20 to 40 trips. Then when it's ready I'm to tired to eat and talk with the guests.  :BangHead:      :laugh:

Well I'm new into this.  Its something my wife has wanted for awhile now so I finally got her the setup.  I didn't know at the time I would be building this table however LOL...  Auto temp kit sounds cool and might be what I need...  First I have to finish this project which has turned out to be a big project and 10 times more work than I thought...

Some great woodworking there. I'm a builder/carpenter by trade and your workshop just made me  :sad2:
I'm still trying to convince my wife that MY half of the garage would be a great place to store my amps and have a small workshop.

Yeah Doug, That is a problem.  I am thinking I will need to sew up a nice cover for her.  I have used this stuff called Sunbrella on some boat upholstery jobs I have done and it works very well.  I'm just ready for this to get finished as it turned out to be a big job.  Wife is happy which is all that matters...

not sure WillieB but I promise you it's heavy!  I have some great casters so it will be easy to move/roll around

Outrageous! Very nice. For some utterly twisted reason I like the modern drawer pulls with the more rustic look (in the first pic you posted)

I forgot to ask you, since you are milling your cedar (looks great!) from rough lumber, are you going to engage in any process to dry it out? Or is that for some reason I do not know unnecessary for cedar?

Listen, the time and materials for cabs are just not worth it for me.  By the time I get the materials, cut it out, glue it, sand it, cover it, grille it!  whoooo.  If it's an amp for me I will build all day long.  But for a customer it just makes good since to give them a real pro cab.

I get it buddy, I was just funning you.  I enjoy building cabs and have some great drawings, but it is actually more work than amp building if you are making one.

really nice smoker, I be by Saturday for some pulled pork.

The Smoke chief is a cold smoker and as such a slow smoker that penetrates the smoke flavor deep into the meat.  With the BGE you will achieve final temp long before you achieve delicious smoke flavor.  Under smoked or over cooked is all you will ever get from the BGE.  If that's what you want more power to ya.  I even slow cold smoke my T bones before I throw them on the grill in order to get a real smoke flavored steak.  Nothing like it.  Tell me, can you maintain under 200° on that BGE for hours?  I think not.  Take it from a Texan.  Cold smoke is essential to real BBQ.  I don't even use BBQ sauce on my meat.  Just real smoke flavor.

So, just how many hours have you spent cooking up pork rib's, whole pork shoulder, whole beef brisket or even some smoke fish in a smoker?

Big Green Egg can do it!

AND, anything under 250, 240, 220 is more than fine for slow smoked BBQ. Lower than that is what they call 'cold smoke'. BUT, the smoke WILL penetrate at ALL these temps just fine.   :icon_biggrin:

I have a 1/2 barrel smoker with the side fire box/indirect heat. 

The genius of the BGE is the insulation of it's shell. Because of it's insulation you can slow smoke a whole beef brisket or a whole pork shoulder for ~8 to ~12 hours with ONLY a single bag of charcoal as apposed to 2 1/2+ bags with my 1/2 barrel for the same time frame.

Now Barry, your a man of logic and working out the numbers, so research it for yourself as you've suggested to others here on solar.   :icon_biggrin:

Hi,  As a matter of fact I can hold 200 degrees for hours on end with my BGE, I have done it so I'm not just saying that.  I have smoked many things on TBGE and the food is amazing.  I also have a Bradley smoker that is an electric smoker that works pretty well too.  I'm not disagreeing with you on your cold smoke method at all I'm just saying my experience and that of many other with BGEs is very good.

Well I'm not knocking the BGE but like many other charcoal grills out there they are hard to cold smoke in unless you use an external smoke generator.  If I'm not mistaken, Smokehouse Products makes a kit to add their unit to the BGE.  I have not only cold smoked steaks but everything else mentioned in the previous post.  I've even smoked cheese with the Smoke Chief.  Try that on a grill and watch it melt.  I got into this whole cold smoking thing because I was sick of the "water added" ham in the grocery stores because it is basically tasteless.  It is getting harder and harder to find old smoke cured method hams in your local market.  You can still find them online but the ain't cheap. I started researching cold smoking for ham but then I found that cold smoking steaks for an hour at around 100-150° before putting them on the grill gives you a lot more smoke flavor before you hit the medium rare internal temp than if you throw it right on the grill even if you use indirect heat.  My steaks were always cooked way before they had absorbed enough smoke flavor for my taste no matter how low I set the burners.  I've got two smokers and a grand classic grill and I do a lot of smoking and cooking outdoors being from Texas.  The smoke chief has made adding deep smoke flavor to all our meat including fish as well as cheese easy.  I just love the thang. :laugh:
