The tubes are interchangeable, except for pinout.  Hence, the adapter.  But, the circuit around the 6EU7, say, in a vintage amp, might not be what you want for a guitar amp gain stage.

Gibson used 6EU7 instead of 12AX7 in a lot (most?) of their guitar amps. NOS is harder to find than 12AX7 and new production is more expensive and fewer choices. If yours are good old stock then they might be worth more than you think.

in a high gain guitar amp the adapter(s) may introduce instability. only way to know is to test. you could try the adapter for just the first preamp stage(s), or if the amp has 12ax7/7025 LTPI then sub for that.
