Title: 6G3 Deluxe cap job

Do most replace the pan caps with original values on these?  Amp still has original orange Mallory caps 1 x 8uf and 3 x 16uf.  Was wondering if people were substituting any values, especially the 8uf?  Of these I've played, I really like the gain structure, not looking for more clean headroom.

8 and 16 are still available. I would have no problem with using 10 and 22.

What would be the effect of 10uf and 16uf or is the larger step change preferred?

Ask rather what "8uFd" was. On older amps it could be -50%/+100%, or 4uFd to 16uFd. While that may be a CYA spec, certainly 6ufd or 12uFd would all be good.

Modern caps run closer to marked size. (Unlike modern shoes...) A 6.8uFd 20% cap may be fine to control B+ buzz. I'm sure 10 or even 12uFd could be no "stiffer" than some old "8uFd" caps. (I'm not sure "stiff" has real meaning in preamps, but somebody will say he hears it.)
