Variacs appear to quite rare to get hold of here in the UK. So it has to be one of the Chinese specials from ebay. What is the amp rating I should be considering when using it for amp work?

If you bought this one ; it is a 0.5 kws transformer. See picture
0.5 kws = 500 watts
You can use it with any amp with input power consumption of no more of 500 watts; almost any amp. It is write on the back of the amp close to the fuse or power cable.
