I got me an Indonesian Strat that I am going to route out and put two airline pick ups in. The airline are humbucker sized single coils. I'm routing the strat and will have a H H pickguard in place.
What fun can I have with the five way switch and two single coils?

Depends on the Switch. Not much, with a standard Strat switch. I'm afraid the way they work, there isn't much you can do with two single coils. The problem is, the standard 5-way strat switch is just a dp3t switch (the same as a Tele) with two extra stops. The only thing it can really do is the Strat thing. You can add a coil tap, but that's about it.
IF you get yourself a Super Switch (http://www.stewmac.com/shop/Electronics,_pickups/Components:_Switches_and_knobs/Super_Switch.html) (a 4 pole/5 throw switch), you can do just about anything - series, parallel, out-of-phase - whatever. You could also go with a dp4t Tele switch (http://www.allparts.com/Tritan-4-Way-Switch-p/ep-4174-000.htm) you could have both parallel and series options (the instructions should be included with the switch).
