Help, Hammond PT for 18 watt stout build.

I am planning on using an old Hammond power transformer for an 18 watt stout head build.
I believe it is 375-0-375Volt, 6.3V and 5V secondary from my research.  Its part # H AO-22111-4.
My question is best method of stepping the 375 down to 300-0-300v for this build.  I am a beginner but have solid electrical back ground as electrician.

That's a tough one. Better to just get the proper PT. I like to even drop down to 275-0-275 for that style amp.
