Fuzzy visitors
« on: February 17, 2009, 07:13:00 am »
I saw something moving outside, out of the corner of my eye
It was a deer slowly making it's way across my driveway.
I picked up my camera and was focusing on it and
then another one came into frame,
and then another one came into frame.

Kind of small deer.
Not sure if they are yearlings or what.
probably the same group of furry bandits that were eating my raspberry bushes last fall.

They didn't do much damage, just leaf munching, and top pruning.
The raspberry bushes were just planted last spring and so they didn't have a bunch of leaves to spare. :)

This year, they will be all over the place.
Suprised how many raspberries I got off 3 first year bushes.
They were awesome tasting too.

Actually, a buddy of mine gave me a nice Doe that he got a couple months ago
Got about 40 lbs of venison in the freezer right now.

With the high cost of foods, sure makes it nice.
I love venison, no fat and very tasty.

Gotta try 'Game Tame' if you can find it. 'course, up there, John Boy's Grillin' Sauce might be the perfect marinade.    ;D

There's not really any steak type cuts.

The butcher ground most of it into hamburger, cube steak, and stewing meat.

There's 3 packs of ribs though.

In case you're wondering, the fawn's mom was OK and they were reunited just fine. In east Texas.

My deer can beat your deer

Not really my deer but we get deer coming thru my yard every night.
The garage lights come on pritty with the snow
I live about 20 miles from Philadelphia Pa 2 1/2 acres.
When I was younger I would travel 200 miles to go huntting up in the mountains of PA
Sometimes never saw a deer close

Yeah, we don't have big herds of deer in the mountains of NC.

The deer are in big herds where ever there are farm fields and lots of food.
No fields of corn up here.

The deer my buddy got for me was a corn fed deer from Charlotte, NC

Mountain deer are tough and have to work for their dinner.
It's rare to see several deer in a group here.

Up in Michigan, where I am from originally, seeing 30 or more deer was common.

The first and only deer I killed was up in Bloomsburg Pa

I went up with a friend from Westinghouse to his mobile home on an apple farm
We ate dinner with the whole family there

I shot my deer in the morning on a hill my buddy asked if I would like him to gut I said yes by all means.

He radioed grand dad he came up with the tractor and drove it down to the farm. We put it in my truck I was home by 3:00 PM

I butchered it my self with the help of my Siberian Husky Snosha She stool a steak

I do not like the tastes so I gave up hunting I got to fat fishing from a boat now for tuna

The game taste that some people describe depends on the deer and how it was prepared.

I don't really notice much of a taste with the venison I have been eating becaus it was butchered by a pro.
You have to butcher it a certain way or you will get a way different taste to the meat.

You can find info about this on the web.
Just google, Butchering venison.

I don't know about butchering techniques to improve flavor but our venison backstraps get soaked in whole milk for an hour to attenuate the game flavor. Light brush of olive oil and onto a hot grill to sear in the juice. Gamey ground meats can get seasoned up like breakfast sausage or worked with worcestershire, sea salt, and smoked black pepper for burgers.

One of the things I remember from reading on the web, was to not saw any of the bones.
Like you see butchers doing with beef cuts.

Use a fillet knife to remove all the meat cuts.
There were others also that had to do with butchering, don't remember them all.

That fish cost me $325.00 and a 24 hour boat trip to the canyons 80 miles off of Cape May NJ in October last year 2008

Ocean fishin'  is pretty fun (ex navy) Went out a few times, is great when the salmon are biting. Almost as fun when certain (less appreciated) work acquaintences are bent over the side feedin' the fishies :D  Nothing like bringing home some nice fresh salmon... li'l butter, some lemon: happyness and fun fer everyone 8) Currently live in the city, wouldn't mind moving up country one bit. 'Jus put a little bobcat tinkle where you don't want the hungry critters- just keep it off 'n the raspberries ;)
This problem calls for a bigger hammer!

Looks like a pug, but I'll take your word for it. Whats funny is at the local greyhound track (which is nearly a gone and dead business here in Az anyway, wife worked there for years) is just like race horses, someone must get a sample from the winning dog... Well, its not funny, but I feel sorry for the sample getter still. Darn fast dogs though I must say, if you ain't never seen em you can't believe how quick they are. The industry kinda got screwed in that Native American casino's pay taxes based on what the claim they make but they're books are not able to be audited, yet they won't let the track have slot machines or dice that sort of thing so the deck is stacked against them. The dogs are actually really well taken care of these days too, but for some reason Dog's are thought of as different than Horses when it comes to racing. I mean its not as sadistic as having pig races at a BBQ Championship cookoff. Sorry for the segway away from the Deer.. :D

Soak that deer meat in milk and then egg and flour/salt/pepper itand fry for a chicken fried steak taste with most of the game gone with the milk..to a point, the longer the soak - the better. At least a few hours...in the fridge and turn at least once...

The word "FRY" is not in my vacabulary  ;D

I don't even remember the last time I had something that was "FRIED"
or breaded and fried

The venison I am eating taste very mild

I have had tough, gamey tasting venison before, but it has abeen a long time.

I do eat fried food on occasion but rarely. Have to have a hamburger or maybe some rings once a month or so anyway. But I haven't forgotten how good chicken fried foods taste, especially with white cream gravy and homemade biscuits..or red eye gravy at the campfire...
