The internal mics on the Tascam portable recorder are a bit more forgiving than an SM57 directional type mic.
I have used SM57 mics also on different recordings. I find that if you place an SM57 dead center on the center of the speaker and about 12 - 16" away to get the best results.
I have the mic horizontal pointing at the speaker. On the mixer, I leave the EQ pretty flat.
Keep your DB levels around -6db. You can boost that back up to around -3db in your recording software. That way you won't clip, or overdrive your raw recording.
These clips that I made were very basic. Just placed the recorder directly in front of the amp and played. I used the freeware program Audacity to do some basic editing, like when the clip starts and ends. Volume adjusting and fade outs. I did not want to add any color to the sound, so I did not do any EQ adjustments.

Your amp chassis looks good. The only thing I saw that may cause some unwanted noise might be the filament heater wiring. Keep those wires from touching other wiring on the tube sockets. Especially on V1, V2, V3 and V4. And away from the Reverb tank In and Out jacks.
Those areas seem to pick up noise like a ham radio. Good job using shielded wires on the Input jack and Volume pot.
