Hoffman Stout vs. Hoffman Plexi 50 vs Hoffman 36 watt

I have successfully built two Hoffman Stout amps (thanks Doug for your generosity!). They sound fantastic. So i still consider myself a newbie amp builder and i would like to know how difficult it is to build the Plexi 50 when compared to the Stouts.  Also, there are very few videos on Youtube that show how the Plexi 50 sound. If anyone has built both, what are the main differences in character?  Also, any directions on how to modify the Stout to receive two more EL84s and become a 36 watter? Thanks!
