Any thoughts on using this for a Hoffman amp build using 2 6v6 or 2 el84s?

That'll work but you will have to slightly modify Hoffman's amp circuits to use a FWB rectifier.
A schematic, layout, and hi-rez pics are very useful for troubleshooting your amp. Don't wait to be asked. JUST DO IT!

After doing a quick read on Robs site, I cam eacross this.  So if I were to build say, a Deluxe Reverb Clone using this PT (no CT), I would need to implement something like this?  Top right quadrant

It could be made to work, yes, but it would be nonsense to describe such as creation as a DR ‘clone’.

Yes, just looking for a worthwhile project for this transformer.  I found it for sale for $25.00.

A DR needs a fixed bias supply. Still doable with that PT but requires a slightly different bias supply. Do some homework.

It would be simpler to do a 5E3, or stout, or some other cathode biased amp. Heck, you could even do a cathode biased DR.
