Hi,
Which wire gauge sizes would  be used in the actual construction of  push pull output transformers and power transformers?

I don't know what the manufacturers are using, but of course it depends on the current you are designing for, also factoring in considerations for size and cost.   There is not one answer here. 

And, the windings are usually different than the leads we see and use, in my limited experience.

I'm curious.  Why are you asking?
