Speaker ohms switch

I am building my second Supro 6420 thunderbolt amp
I have an output transformer witch has 5 choices
3.5--  8--  16 -- 250-- 500 ohm taps
8 ohms is what I use should I put a switch or another jack in for a 16 ohm speaker

Won't hurt, might need it someday, who knows. If you have room use another jack.

does it make a difference in sound 8 or 16

No, not if you go 8 ohm tap to an 8 ohm speaker and 16 ohm tap to a 16 ohm speaker.

At the risk of tearing asunder this seemingly simple thread: there are those that believe, swear in fact, that at least in some cases, different ohm taps sound different even when used with the matching speaker load impedance.  See, e.g.:  http://www.thegearpage.net/board/showthread.php?t=984649
